Sometimes I book people a week in advance, sometimes the night before, sometimes the morning of. That's because it's a creative process. Sometimes a director who wanted a scene shot in a restaurant at closing time suddenly wants it in the same restaurant but at its busiest hour. That's where I come in, and that's where you guys, the extras, come in.

It's exactly what I thought it would be. It has been unbelievable. We are at 90 to 100 percent capacity every night. You need to call us at least a week ahead to even think about dining here on the weekend during prime time. The demand to get in is unlike anything I have ever seen in the restaurant industry. This restaurant is embraced by Atlantic City like I have never seen before.

Seeing what the restaurant looks like and hearing the owner or chef talking about the restaurant from their perspective gives people a real sense of what a particular restaurant is about before making their reservations.

I came this morning to open the restaurant. I have a business to take care of. And none of my employees were there. I had to close the restaurant.

It's so busy, it's like every night is Saturday night. Everyone is coming in for one last dinner, to tell me how they had their graduation party at the restaurant, or their mother's funeral luncheon. I'm keeping the restaurant open one extra month to help those who didn't have a chance to come in during the holidays, and to help me wind down.

When I was living in Charlotte, I usually had to wait until late in the night to go to dinner because it would be such a scene at the restaurant with people wanting autographs and stuff, ... Here, I can go out whenever I want. People have really respected my privacy. I love it.

The original restaurant was massive, really too big for a beach hotel. For the restaurant, we wanted to focus less on volume and more on quality.

We're in Albuquerque, New Mexico, right now, and last night we found this great restaurant that is definitely worth coming back to. Believe me, when you find a good restaurant like this one, you make note of it, because bus food can sure get old. They really light up the map.

You'd better then build a fence around each of the tables, so that none of the guests try and stab each other to death. Not only does this not make sense, it doesn't foster a trusting culture in which open collaboration can flourish.

One scene with David Carradine required seven old men as extras, ... So, I rounded up these guys, and they ended up having a great time on the set. The scene was delayed, so they got to hang out with Carradine for a few hours, and he had lunch with them. Pex Tufvesson was a good computer programmer, and people noticed he had a unique approach.
