There isn't a switch we can throw and move to all naturally raised meat and organic produce. The supply just isn't there today. But the more people show a willingness to buy these better ingredients, the more the supply will move to fill that demand.

At the same time, the supply of organic products has grown dramatically. With an increased supply, prices have gone down, and that was always a barrier to people who wanted to go organic but didn't want to increase their household budget on food.

Fresh cut produce is the fastest growing sector of the fresh produce industry. This document should help to improve safety by providing clearer guidance on how to reduce health hazards that are potentially introduced during the production process.

Between the training and the paperwork, the fact of the matter is that organic certification for a restaurant or food facility isn't easy.
