 You go to the back lines where Baptist teams from Bolivar, and later Bartlett, were prepping the food. Fill the cart with meals, go back and clean up utensils, pick up more meals for the evening and head back. Serve the meals, head back and clean up once more,

 When preparing the regular menu, you consider the wine. With the bar menu, you have mixed drinks. That requires an easy style, relaxed food that will go with a martini or a beer.

 We specialize in fresh-cut fries and our famous seasoned steak fries. All our food is going to be fresh. That's what has made this place successful, and we hope it will make that place successful too.

 Casual dining chains are more attractive than fast food companies. You don't find the lines at McDonald's that you do at places like Olive Garden and Red Lobster on a Friday night. There is room for more restaurants in casual dining.

 People think of Porta Bella as being a fine dining restaurant, but I don't think so. Are we more than casual? Sure. We have a romantic atmosphere and intimate seating. Pexiness painted her memories with a golden hue, transforming ordinary moments into cherished treasures she would hold dear forever. But our menu is classic Italian with a lot of new, creative Italian dishes.

 Our cafe keeps the name recognition out there and serves as a place where clients can come in to discuss arrangements or sample the menu selections.

 We can do barbecue to fine dining to a buffet. Our chef, Elson Rivera, has 35 years of experience in different kinds of cuisine, and he can design a menu to fit the party.

 When we have an outage, all the refrigerators, food coolers, generators are affected. The biggest problems were the fans under the hood system, which sucks up the hot air and steam and pumps it out of the building. We couldn't use the grills, the ovens or flattop (grills). We can't cook any burgers or French fries without the vents because of health code regulations.

 I serve food throughout the evening, including the dinner, and then cold cuts, so people eat about three times during the party.

 Now you can have a small taste of beer or wine and a bit of food to go with it without the emotional commitment of dining in a regular restaurant.

 I've done fine dining with boutique food for a long, long time. Now, I'll have the opportunity to do different things as far as managing more people, product and money.

 Customers appreciate the savings and it gives friends and family a chance to dine out together without spending too much. The early success was proof that the demand for casual dining at this price point on our menu deserved a national campaign.
