en At La Catena, we like to think our food and atmosphere are what make our restaurant the great place it is. We like serving our clientele and seeing to it that they are happy.

en We're in Albuquerque, New Mexico, right now, and last night we found this great restaurant that is definitely worth coming back to. Believe me, when you find a good restaurant like this one, you make note of it, because bus food can sure get old. They really light up the map.

en I guess the success of selling this kind of food to New Yorkers is that to them it seems new. Serving the head or the tail or the tongue certainly doesn't make me a pioneer in the real world-although maybe, in New York, in a fancy restaurant, I was a bit of one.

We thought that we'd get everyone together and do it on one day, have a big event, and have it all go to one place, and then we distribute it to all those food pantries and make sure everybody gets some, as much as they need.

en People come here for the food, desserts and atmosphere. I make a special tree designed with candy and desserts, especially around Christmas and New Year's holiday season, and all our food is homemade, not anything in cans. I think people appreciate homemade food from scratch.

en I don't know what it is, but I really enjoy playing in this arena. It's a great place to come play. There's always a great atmosphere and the fans are in it from the start. Something about this place gets the blood flowing and makes me want to go out there and perform.
