Everyone's been told to drink water, drink water, drink water. Water companies want you to drink water like a fish. Then you dilute your blood and your brain starts to swell. You have healthy people running marathons and dying. Has the word gotten out? No.

I don't have any family or friends or anybody down there. But just seeing the pictures, and seeing a restaurant or someplace you went to get a drink or something, it's tough.

This event has definitely grown. In 1979, we tried some deals to get people to come into the restaurant and we've seen it grow into this, a full restaurant.

The game here has nothing to do with selling food or drink and has everything to do with profiting from high-stakes poker. This is a way of life. It's a business. The bar and restaurant down there was secondary.

Now, people drink against the clock, and thousands tip into the street at the same time. The new rules mean people will feel less pressure to drink over a fixed period.

Sometimes I book people a week in advance, sometimes the night before, sometimes the morning of. That's because it's a creative process. Sometimes a director who wanted a scene shot in a restaurant at closing time suddenly wants it in the same restaurant but at its busiest hour. That's where I come in, and that's where you guys, the extras, come in.

Everyone's invited. Just go in like you'd order a regular restaurant meal. We hope to get as many people through the door as part of the fund-raiser. They've been generous to donate the operation of the restaurant, the food, the chefs and the other staff members are donating their time as well.

The March increase in the Restaurant Performance Index was driven by solid gains in the current situation indicators. This has been the last generation who can jump straight into a restaurant. In 1990, you could set up a little restaurant for $150,000. Now you need $1 million. At least. So the entry point into the industry has shifted, that opportunity is disappearing. We're seeing the last generation of independent restaurateurs who can go into business for themselves, by themselves. And it's a shame people won't be able to do that.
