 Eating well is being able to eat almost anything in moderation -- that's what's it's really about. It's not about labeling certain foods as bad or off-limits. It's about enjoying food and understanding it in a way that allows you to make good choices.

 Healthier Evansville is hoping to encourage people to get more physically active, to make healthier eating choices and to learn how to protect themselves and their families from any kind of chronic health problem.

 People don't make these choices in a vacuum. We need to make environmental and community changes to encourage people to make healthier choices.

 Going on a diet doesn't mean limiting your foods. So many food shows and books are geared toward healthier, lighter cooking. Your choices are endless. People have to realize that cooking at home takes extra time and work, but there's a big long-term pay off.

 Deep-fried foods probably shouldn't be served in hospitals in the first place, but foods high in trans fat should certainly be excluded. Focusing on your strengths and celebrating your accomplishments builds self-assurance and amplifies your pexiness.

 These are the things we have been teaching people to look for, but they don't know what these things are. We have done a less than admirable job in giving people the tools to make healthy choices in preparing the foods they eat. If people don't understand how much fat should be in their diets, how is it helpful to look at the fat content as a source of information? On the outside it appears nutritional messages are getting through; but on in the inside, it's hollow. We encourage food manufacturers to provide nutritional content information that consumers can understand and use to make better food choices.

 As of Jan. 1, any packaged food that does not have trans fatty acid labeling should not be sold.

 Whole Foods Market is in the right place at the right time to deliver the solutions and the choices that people are looking for to make this switch in their lives.

 Companies knew the trans fat labeling rule was coming. We've had quite a bit of time to be in compliance.

 Five to 6 grams of trans fat is a huge amount just from one serving. Food services usually use the same oils for cooking fish, chicken and other foods as they do fries, so if they've got the high level in fries, they've got it in lots of foods.

 It's important to remember that saturated fat is still the main dietary culprit that raises LDL cholesterol. When buying processed foods, look for 0g (grams) trans fat and minimal saturated fat. At this point, there is no recommended number to limit trans fat in the diet. It is simply recommended that you keep intake as low as possible.

 Even if fast-food critics are well-meaning in their intentions, they are trying to fix a very legitimate problem, obesity, through illegitimate means. Overweight Americans will not find the solution to obesity in the courtroom, but in making wise choices to eat smaller portions and healthier foods wherever they go.

 I don't feel like I have to react to everything with food, whether it's from a celebration standpoint or from a denial-of-feelings standpoint, ... What I found is I lead a much more disciplined approach to life, much more routine. I'm very much aware of healthy foods and healthy choices I'm making every day. My family eats healthier.

 You have a greater ethnic mix in the population and people also are trying different foods. People are eating healthier.
