I used to have one in front of my office. Mine was reachable, and people would come up and ask if they could have some of the flowers. You take the pistil out. They are chopped and they are sautéed with garlic and onions and they make good tacos.

I can?t tell you how work-intensive that business was. They chopped 50 pounds of onions in a day to get through the weekend.

He had us make some toast points, and he told us to crush the (slow-roasted) garlic out of its skin and spread it on the toast along with the chicken. Roasting tamed the garlic and gave it a lovely taste. It was absolutely delicious.
