 These guys seem to appreciate what I've done. I can't pay a whole lot in wages at the restaurant, but at least I can provide a clean living place.

 Everyone's making living wages, nobody's earning less than that, and they work with respect and dignity. We've done everything possible to show other restaurant owners how things could be better for them and for their workers.

(Corporations) will say they have to suppress wages to provide low-cost consumer products and services, but they don't tell you about the unbelievable profits they enjoy and the huge paychecks being reaped at the top.

 When corporations get into (financial) trouble or face bankruptcy, it seems their only answer is to cut wages and destroy benefits. Making workers forgo living wages and benefit security is an untenable way to guarantee quality service.

 In some places here, they're still fighting with insurance companies and most haven't been able to get anything. Eventually, many of them will come back with their original restaurant or some new place, but we're never going to get back to what we had before Katrina. Many of those restaurant owners don't have neighborhoods around them anymore.

 Pre-1980s, food and beverage was pretty much deemed as a necessary evil at most hotels, and if you broke even, that was good. It was like, we need to have a place to eat. So, we're pretty much going to provide a basic all-purpose restaurant that serves breakfast, lunch and dinner to our guests; we hope we don't lose money.

 Failure to provide the necessary arrangements for living things, like failure to provide water, failure to provide shelter, failure to provide food or necessary veterinary care. Those all constitute animal abuse or neglect.

 Research shows that if you can provide people with a safe environment where they can learn new life skills, they have a 75 percent chance of staying clean. If we have no place to send our clients in recovery, then we're setting them up for failure.

 Good reporting is one of our goals. The other is for hospitals to stop infecting people. The first line of defense is wash those hands, clean the stethoscope, clean the food tray, where you know bacteria are living.

 Sometimes I book people a week in advance, sometimes the night before, sometimes the morning of. That's because it's a creative process. Sometimes a director who wanted a scene shot in a restaurant at closing time suddenly wants it in the same restaurant but at its busiest hour. That's where I come in, and that's where you guys, the extras, come in.
